Parsnips grow best in well-worked, organic soil. Plant in the spring, and you'll have parsnips throughout next winter. Leaving them in the ground until after the first frost will make them sweeter in taste. Sow seeds 1/2 inch deep & 1 inch apart in rows that are 6 inches apart.
