Getting Started with Spaghetti Squash
Spaghetti squash is one of the most rewarding vegetables to grow in your winter garden. Unlike summer squash varieties, this hardy plant thrives in cooler temperatures and produces abundant yields with minimal fuss. Whether you're a seasoned gardener or just starting out, spaghetti squash is forgiving and fun to cultivate.
Why Grow Spaghetti Squash?
Beyond its unique texture and mild flavor, spaghetti squash offers practical benefits for home gardeners. The plants are vigorous growers that quickly cover garden space, naturally suppressing weeds. Once harvested, the squash stores exceptionally well in a cool, dry location for months—making it perfect for extending your harvest season well into winter.
Planting Your Spaghetti Squash
Start seeds indoors 3 to 4 weeks before your first expected frost, or direct sow them into the garden once soil temperatures reach 70°F. Plant seeds about 1 inch deep in rich, well-draining soil with plenty of organic matter. Space plants 3 to 4 feet apart, as they need room to sprawl. Choose a location that receives full sun for at least 6 to 8 hours daily.
Caring for Your Plants
Water deeply and consistently, aiming for about 1 inch per week. Mulch around the base of plants to retain moisture and keep soil temperatures stable. As vines grow, gently guide them along trellises or allow them to spread across the ground. Fertilize every 3 to 4 weeks with a balanced fertilizer to support healthy growth and fruit development.
Harvesting and Storage
Spaghetti squash is ready to harvest when the skin turns from green to pale yellow and feels hard when pressed. Cut the squash from the vine with a sharp knife, leaving a short stem attached. Cure harvested squash in a warm, well-ventilated space for 7 to 10 days before storing in a cool location. Properly stored squash can last 2 to 3 months or longer.

Once you've grown your own spaghetti squash, preparing it is simple. Cut the squash in half lengthwise, scoop out the seeds, and roast cut-side down until tender. Use a fork to scrape the flesh into strands that resemble pasta—a fun activity for the whole family. Enjoy your homegrown harvest with your favorite sauce or seasonings.
